- 6 large egg whites
- 1.5 cups granulated sugar
- 2 tsp corn starch
- ½ tsp lemon juice
- ½ tsp vanilla extract
For the Cream
- 300g thickened cream
- 2 tbsp granulated sugar
In a large mixing bowl (or thermomix if you have), beat efg whites on high until thick and soft peaks form. Gradually add the sugar, about a tablespoon at a time, beating well after each time. Beat for at least 10 minutes until thick and glossy.
With a spatula, fold in extract, lemon juice and corn starch. Spoon mixture onto parchment paper to form a circle. Working from the centre spread mixture toward the outside edge, building edge slightly.
Bake for 1 hour and then let cool.
For the Cream
In a small bowl, beat heavy cream until still peaks form. Spoon cream onto the top of the meringue.
Top the Pavlova with berry fruit of choice, including raspberries, passionfruit, kiwi fruit ans strawberries.
Sprinkle Davidson Plum Powder on the top.
